It's the day after Thanksgiving and nobody wants to even look at the turkey anymore.  So what do you do with all the leftover food?  You try and find some creative ways to use the leftovers in new recipes. 

I am not really a huge fan of turkey, but I hate to see any food go to waste.  So my mom and I always try to find some fun new ideas for turkey.  Dallas Chambers always suggests turkey enchiladas, but since I don't like enchiladas I've never tried this one.  Over the years we have found that the simplest recipes are the best ones.  Here are a few ideas that we use.

First off, nothing is better than a turkey sandwich.  Pile it high with lettuce and tomato and cheese.  Yummy.  But that is a no brainer.   How about a turkey salad.  Fresh lettuce, tomato, carrots, and instead of grilled chicken, use left over turkey.  If you really want to get creative try and find a recipe to turn your leftover stuffing into croutons.  A turkey salad isn't too heavy, but very delicious.

Another way to use that leftover turkey would be to make stuffed bell pepper.  Now when I make stuffed bell peppers, I usually use some kind of bread stuffing so this would be a perfect way to knock out two leftovers in one awesome dish.  Yummy!

And last, but certainly not least, you could make turkey quesadillas.  This is the simplest of all the recipes, but it is usually the one that goes the fastest.  And if you want to dress it up, you can make some kind of cranberry dipping sauce.  You family will love it.

So here are a few ideas on how to get rid of all those leftovers.  Just remember that leftovers are only good 3-5 days after they are first cooked.  I always play it safe and never eat them after three days.  What are some of your favorite recipes?
