I love our community of food trucks. We have so many great ones to try on any given day. Do you want great tacos? We have a food truck for that. Do you want a great burger? Sure we have that. How about great treats? Well, I think you get the point.

I didn't think there was a way that you could improve on a food truck until I found out about Dillos Burger Bus. Even before trying the food, I knew this was different. Why? Well, you don't have to stand out in the cold or the extreme heat to order food. Since this is Amarillo I must mention you won't have to stand out in the Texas Panhandle wind either.

Not only that but they have seating inside so you can dine in. There is a table. There are a few chairs with counter space. There are a couple of bus seats to sit in and wait for your food. Yep, a game changer I tell you. Now the fact that you could order inside and out of the elements was a win for me. I mean it was cold last week. So not having to worry about that was great.

When I found out they were going to be out at  Auto Nation on I40 and Coulter for lunch on Friday, I planned to pick up lunch for the family and me. I love the fact that they have kids' meals so that is great. I mean if I can order my granddaughter her own food it means I don't have to share mine with her.

We checked out the menu and right away I knew that my daughter would choose The Ol' 66 she pretty much likes a cheeseburger with just cheese, pickles, and mustard.

I made sure I snuck a bite of my daughter's burger. Since it was just a cheeseburger I was able to taste the patty and notice it had a great flavor.

We decided since this is a burger place we would get Laila the Dude's Sliders. Usually, we get her chicken nuggets but come on she had plenty of nuggets this week and when in Rome.....

Laila is a snob when it comes to french fries. I think that is her favorite food group. She ate them all up. Now the slider she was only able to finish one. I mean she is only 17 months. So that just means another slider to eat later on.

I was torn on what to get. I wanted to get a burger because, see above, it's a burger place. I was also curious about the Brian's Take. My favorite sandwich is The Plant Sandwich at Rainforest Cafe. It's a portobello mushroom sandwich. So I just knew I would like an eggplant sandwich as well.

Decisions, decisions. So really I decided to get both a burger and the eggplant sandwich. I could eat one for lunch and one for dinner. The burger I opted for was The Rattler. I really like spice.

The Rattler had sauteed jalapenos and onions with pepper jack cheese. There was also bacon with a chili lime glaze. This burger was served with bacon cheese fries in chili lime glaze. I did appreciate the spice. I found myself making sure I didn't leave one piece of bacon or cheese behind in the container.

Brian's Take features double eggplant patties and is topped with portobello mushrooms, sauteed zucchini and squash. There is mozzarella cheese, hummus and a poppyseed bun. This is perfect for anyone not wanting a burger. Any vegetarians in your life as well.

It is served with honey chipotle cauliflower bites seasoned with sesame seeds. They had a good little crunch. They were not all mush, which was good. The sweetness of the honey was great. The only thing I would change about this sandwich would be next time I would add sauteed jalapenos. Just to give it a little kick. Again, I love spice.

Overall I really enjoyed my food from Dillos. The wait time once you ordered was not bad at all. Plus you are inside so it makes the wait even better. The staff is friendly. While I was there it seemed The Cadillac was the most popular burger being ordered.

The only complaint I had was totally my fault. Ok, the complaint was really from my daughter. I was supposed to order a root beer float. She had been looking forward to that all week. That totally slipped my mind. She was so mad at me. I get it. So Tyler, I will be back. I mean I have a couple more burgers on the menu to try.

Most importantly I have to get a blended root beer float for my daughter. She may never speak to me again.
