One of my favorite things to do with left overs is try different things and when it comes to Thanksgiving turkey leftovers, while sandwiches are always ever popular, this year I offer you a knew idea.  Get out that leftover turkey and get ready to add some Latin flavor to your American tradition!

 

 

 

 

 

 

 

 

Here's what you'll need to make the recipe.

About 1 pound left over turkey, shredded

2 cans cream of mushroom

12 oz of shredded swiss cheese

Flour torillas

 

It's pretty easy, you take your shredded turkey and roll it in your flour tortillas and place in the pan.  Fit in as many as you can, you should be able to fit the entire package of tortillas and turkey rolled up into 1 pan.  Once you've got them all rolled up, poor your cans of cream of mushroom over the enchiladas and top with the shredded swiss cheese.  Then just bake it up for about 20 minutes and that's it!  A little salsa and chips or rice and beans, or even all on the side,and you've transformed your leftover turkey into a delicious dish you can feed the family without them complaining about eating more turkey.

You can try different sauces and cheeses on top.  Sour cream and cheddar cheese work good and I've also tried it with cream of celery with swiss cheese and that was good too!  If you don't like cream of mushroom and swiss cheese as much as I do, you can try a little experimenting of your own and come up with your own version more tailored to your tastes.  Just play with it till you get it the way you like it, this is just the way this white boy likes it :)
