I wrote this last winter:

The old Johnny Carino’s  at Soncy and I40 is undergoing a spicy transformation. Say hello to Texas very own Chuy’s Tex Mex restaurant. Based in Austin, Chuy’s has 102 open locations, making Amarillo it’s 103 property to open this spring.

Unfortunately the pandemic halted construction and left plans up in the air. I have called their corporate headquarters in Austin several times without getting information about the future of this new location.

Today I did. Roxanna from their Austin headquarters called and informed me that they will resume construction in the coming weeks and plan to have a grand opening in January 2021.

This is great news as more than 100 people have already been hired for the Tex Mex restaurant and will be adding about another 100 positions.

Chuy’s will be a great addition to the restaurant offering in Amarillo especially considering how they truly serve and give back to the communities they are in. Their founders, Mike and John, started Chuy's with the belief that they should always help the people in the neighborhoods where they do business, especially for their youngest members, children. Chuy’s restaurants are also involved with what matters most to their customers; sponsoring little league teams, local event participation and donating thousands of dollars in Chuy's food to charities, schools and more.

Can’t wait to have Grand Ma’s Rockin Rita and the Chicka-Chicka Boom –Boom!
