Ok, Those of you who have seen my posts know that I have an affinity for the strange and for even stranger roadside attractions, Just last week alone I met this fine fella on US 70 just east of Ruidoso, NM:

The fine folks at Real Idaho Potatoes just happen to be crossing this great land of ours and Amarillo happens to be one of the stops tomorrow.

Basically put, it's a 72 foot truck carrying a 28 foot 4 ton fiberglass potato cargo. When you get to thinking about it, It's a roadside monument in itself because there's just a natural curiosity about displays like these. You wanna grab your phone snap a picture and look up whatever it is. That's the point. We know Idaho is known for it's potatoes. It's cool that they get the word out like this. What would The Lone Star State put on a truck like this? I don't even know where to start...

So What Could You Do With a 4 Ton Potato?

First off, you would have to stumble on a potato this big, it would take you roughly 7,000 years to grow such a thing, I'm impatient. I don't have that kind of time. but I would take the time to enjoy the roughly 1 Million French Fries you could cut off this bad boy. Maybe mashed taters is your thing? You could get over 20,000 servings which by the way is about how many regular potatoes would equal. It would take 2 years to bake if you could, which I don't think they make an oven big enough and just think of the condiments needed to finish the job.... By the way. I'm getting these numbers from the Big Idaho Potatoes folks. They got a few more interesting numbers and details there.
