There's one thing that Amarillo has a lot of: options. Namely, food options. We can choose to grab fast food. We can choose to sit down in a nice restaurant. Or we can choose to hunt down a new food truck to try.

Over the past few years, food trucks have become a way of life. I am in love with that fact. Just think about the endless options for different foods that we finally have at our fingertips, thanks to the popularity of food trucks here in Amarillo.

So when it comes to food trucks the sky is the limit. You want a food truck that is strictly barbecue? Done. How about one that is strictly breakfast food? Sure. Or what about one that is strictly dessert? Well now that you mention it....

Allow Me To Introduce You To: COW

Mom always said that breakfast was the most important meal of the day. C.O.W. food truck agrees; and they serve the breakfast of champions.

COW, I Don't Get It, Why is it Named That?

I was confused at first too, and at first I thought it was for the spotted truck, but it's Cream Over Waffles. Get it? Oh, they are clever.

They have the essentials, eggs, bacon, sausage, and waffles. And not just any ol' waffles, but the best-looking, melt-in-your mouth buttery crispy chewy waffles to boot.

Is your sweet tooth itchin'? Stay with me, you'll love this part: you'll satisfy that right quick with any of their amazing homemade ice creams. And I mean, wow. They've really got quite the set-up for creating their own unique blend of flavors.

They have an endless rotation of delicious combinations so you will never get bored or run out of new tasty treats. And if you have them put a few scoops in one of their waffle bowls or cones---oh! It's heaven. Talk about a win.

This phenomenal sweet treat of a food truck is run by Amanda and Kolby Gilleland. Originally from Pampa, the couple spent the better part of a decade in the culinary field up in Colorado. In fact, you'll find a healthy heaping of Colorado influences in just about everything they make.

And I am certainly not complaining. I do mean it when I say the waffles are to die for. Amanda and her crew makes these in a way where the ice cream caramelizes the surface as you eat it--it's indescribable bliss.

Keep an eye on their Facebook page HERE so you can keep up with their flavors and of course their location.
