
This Amarillo Restaurant Will Become Your New Favorite
It had been 13 years since I was last able to indulge in one of my favorite places on the planet, so when I heard Amarillo was getting one of these, both my wife and I about lost our heads and freaking out over the fact that we were going to get to enjoy one of our favorites again.
Amarillo Finally Has My All-Time Favorite Restaurant
The moment Qdoba said they were taking over the old Roll Em Up Taquitos location on 45th and Bell, our eyes stayed peeled to the building. Weeks, months passed, no progress. We had heard they were opening the doors on my wife's birthday.

Well, that day came and passed. The progress was slow until it wasn't, then all of a sudden, bam, we're open.
Qdoba has been open for a couple of weeks now, and we've been so busy since they opened that we hadn't had the chance to go there. Yesterday, I couldn't take it anymore. I had to have it. Apologies to my wife, who is finding out for the first time I had it without her.
I hope I'm still married after this.
Every Texan Can Make Their Own Menu Items
As I was going over the menu, I realized that the burrito that was my absolute go-to was on the menu, but it had changed. I simply couldn't have that. I needed exactly what I had always ordered. Time to build my own.
Cilantro lime rice, pinto beans, chicken, lettuce, Salsa Verde, sour cream, guacamole, and their tasty queso. Dump it all in there please. Give me a splash of fresh cilantro and we're set.
I watched them build this incredible masterpiece of a burrito, my mouth salivating at the idea of getting to sink my teeth into it. Paid up, now let's run back to the office. I rush back in, sit down, rip it out of the bag and tear the foil away.
I've never taken three bites of something so fast. You'd have thought I hadn't eaten in days. What's inside? Pure fire.
I ate that thing so fast I'm not even sure I allowed myself to savor all those different flavors mixed together. Guess I'll have to go back and take my time on the next one. If you haven't been yet, go. Thank me later.
