A Quick and Easy Dinner to Make in Amarillo
Nobody warned us growing up that the most difficult decision we had to face every single day was what is for dinner. We think being an adult is great. Then we realize that decision about dinner is not easy. We seem to always have someone not happy.
So finding an easy but good dish is top priority. Am I right? I made one yesterday that qualifies. It is the Mississippi Roast. You can make it in a Crock Pot or even an Instant Pot. So that makes it even easier.
So I ran to United yesterday to get the limited ingredients that you need. You have to choose a roast to your liking. Extra points if it is not $100. I mean man the price of meat these days. So I grabbed a roast. I also needed a package of dry Ranch and an Aus Jus package.
You need to also grab a jar of pepperoncini's. You can choose the whole peppers or just the rings. I went with the rings. The recipe also calls for a stick of butter but I choose to skip that.
So I get home and throw the roast in the crock pot once I line it with a disposable liner. I have no time for a messy crock pot. Then all you need to do is dump the dry ranch and the sus jus on top of the roast. Go ahead and dump the pepperoncini's on top with as much juice from the jar as you want. If you add the butter now is the time.
You then either put in on high for four hours or on low while you are at work. That is it. How easy is that? Now when you get home it is ready. You can serve with a veggie and maybe some potatoes or pasta. It's a great meal.
Don't worry about the pepperoncini's making the roast too hot. They do not. So don't let that scare you off. This is an easy recipe that the family will love and if they are like mine will keep asking to make it again.
