One of the things I have tried to teach my daughter is how to cook. Whether it is a full out difficult menu or a quick and easy recipe. Knowing how to throw a meal together can be very rewarding. She is a huge chicken, turkey meat kind of person. Always has been.

Since she has found out she is pregnant her baby girl really craves a lot more red meat. So I have had to find some quick and easy recipes for her since she is on bed rest. So I have been trying to find stuff she will like.

I think I ran across a winning recipe. She made it Sunday night so I couldn't wait for the review. I mean what could be better than a quick and easy meatloaf?

Ingredients

  • 1 lb ground beef
  • 2 eggs
  • 1 box Stove Top Stuffing (Any flavor)
  • 1/2 cup ketchup
  • 1/2 cup water

Really that is all you need. The stuffing mix takes the place of any other seasoning you may need. I really threw everything in a bowl and mixed it up. I really only used about a 1/4 cup of ketchup and used the rest to squeeze on top.

Since she really was the only one eating it I bought 3 little mini loaf pans and split the  meat in between. That way she has 3 separate meals. We left one out to cook that night. The other two I put in the freezer for later.

When she was ready to cook I had her preheat the oven to 350 and let the loaf cook for thirty minutes. I also gave her the option of cooking in the air fryer at 350 for about twenty minutes.

She also bought some side dishes of macaroni and cheese and mashed potatoes. She made one for dinner last night and kept the other for another meal. She also made some green beans. A quick, healthy meal that even her baby was happy with.

My daughter even said it was really good. Oh and you can't beat how quick it was to make. A win win situation.
