Anybody who knows me, knows that I have a major sweet tooth.  One of my favorite things is ice cream.  So when I found out today was National Ice Cream Sandwich day, I immediately filled with joy. 

A whole day dedicated to ice cream sandwiches!  The thought warms my heart.  So what to do to celebrate?  How about making some homemade ice cream sandwiches?

I love being in the kitchen making new creations for may son.  One of our favorite things is to make ice cream sandwiches.  I take a simple chocolate chip cookie recipe and bake it in a pan, like a cookie cake.  I make sure that it won't turn out too thick or too thin.  You can be the judge because only you know how you like it.  :)

Next we each pick out our favorite ice cream.  I'm a chocolate lover so I usually go with Ben and Jerry's Chocolate Fudge Brownie.  My son's favorite, cherry vanilla.  It is very important to place the ice cream on the counter and bring it to room temperature.  This will make it much easier to scoop and spread.

Once the cookies are baked and cooled, cut to desired size.  Scoop as much ice cream as you want onto the bottom cookie and then spread it evenly.  Top with another cookie and if you like, you can cover the edges with sprinkles.  You will then place them in the freezer to harden in place.

This makes such a nice dessert and everyone can have their favorite ice cream flavor.  It is a little time consuming so you can take short cuts.  You can buy already made cookies at the store and still have the homemade feel.
