We have a lot to do this week. Hopefully you already have that turkey in the fridge thawing. We will need to start preparing for our family get together on Thursday. For one meal we sure take a lot of time preparing.

Are You Ready for Thursday?

I always like to get as much as I can made earlier in the week. Just to make Thursday a lot less stressful. The problem with that? We still have to feed our family and we don't want a lot of extra work.

I made this dish for my daughter recently and she absolutely loved it. I decided this will be my go to on these busy nights. It is definitely family approved. Oh, and it's so fast. You will have it cooking in no time.

This Meal Can Be Made So Many Ways

I like to use my crock pot....or even Instant Pot to save me time. Just to dump and go. Since we will be eating a lot of turkey this week this recipe calls for beef. You could also substitute chicken if you want. No worries.

Slow Cooker Beef Tips Over Rice

  • 2 lbs of stew meat (could use chicken cut up in cubes)
  • 2 beef bouillon cubes (or chicken if you go that route)
  • 2 brown gravy mix packets - brown (could use chicken)
  • 1 can cream of mushroom soup
  • 1 1/4 cups of water
  • 3 cups of cooked rice (I used the boil in bag rice to make it even easier)

That is it. You only need six ingredients. The result is heavenly. You have the beef with a gravy to throw over rice. Using the slow cooker you can cook on low all day or on high for four hours. If you use the instant pot just throw all the ingredients in a safe pot or bowl to put inside on a trivet. Add your cup of water below. Cook for about 30 minutes and let the pressure release naturally.

That is it you are ready for a great dinner.
